I’m fishing for product tips on what to use to refinish a commercial bartop. The mahogany bar was stripped and finished 3 years ago using a Marine Varnish. The owner wants it finished again and would prefer a finish that has the appearance of a thick layer of plastic on top, and is more durable. I’ve heard of such products but don’t know what they are. I’m assuming they are a type of epoxy. Can it be put on top of varnish? If you have any tips on prep,application, drying times, etc. etc., I’d be very appreciative. Thanks to all.

Don't know if it would feel like a thick layer of plastic, but Hydrocote makes a product, Polyshield, that is suggested for counter and bar tops and exterior use. I've been very pleased with the way it goes on, but haven't really tested its water resistance. http://www.hydrocote.com
*There are various 'bar top and tabletop varnishes' and epoxy preparations used for these very applications. Check the Garrett Wade catalog and other woodworking catalogs like Woodworkers Supply, Woodcraft, etc.Additionally, several coats of marine spar varnish would work fine too.
*The disadvantage to epoxy finishs is that the wood will move, become larger and smaller with moisture and heat but this finish will not move at all. Some of the bars etc. we finish have large splits in the finish as a result of this characteristic of epoxys.
