I had a wonderfull cherry table custom made 12 year ago. It was simply finished with an oil (might be linseed or flax oil) and developed a beautiful redish color over the years.
The table surface is drying out, and I was thinking to reoil it. How should I proceed ?

Apply more oil. If it was a pure oil finish (real tung oil or boiled linseed oil) is needs to be renewed every couple of years. Just apply more, let it sit for 15-30 minutes and wipe it dry. Then let it fully dry for 3-5 days before you put any dishes on it.
However, I would try to find out exactly what was used on the table. There are a number of other "oils" that could have been used and renewing them will be a different process from the above.
There is also a finish that can be applied over a true oil finish that will be quite a bit more durable but still maintain the look and feel of the wood as you have now.
