How can I best remove a water based polyurethane finish from a cherry table top? I intend to replace it with a Danish oil type finish. Thanks for any suggestions.

Use methylene chloride stripper. Find the strongest stuff that you can find to minimize the elbow grease required for the job. Get a good organic vapor mask to wear and ventilate the work area, or do the job outdoors.
*Citristrip has worked well for me on water based finish, without any of the hazards of methylene chloride.
