Does anyone know how to construct either/both of the attached rounded corners? (w/o CNC or bending plywood)

They are cut to the radius from a plank and glued together then shaped and sanded to the final form.
Yeah. I count 13 layers of 3/4 inch material on that corner, all glued together. I'd bet the straight sides are veneered.
The first one looks like a stack-built corner cut to shape like Gulfstar says. The second one looks like a solid side faired into the top. To make it as a solid part could be done by resawing...perhaps even getting 2 sides out of a thick board that starts out a bit overlength. It would be fun to try!
In the second picture, it is possible that the vertical section is 8/4 rounded on the outside only and has a rabbet to seat the door.
