In the process of blending out where the octagons meet, I ended up cutting through. The overlap on each octagon layer was about 1/2”.

You need to leave yourself more material to turn.
The segments need to be thicker. (inside to outside) Make them bigger than they need to be (depth and width, same height) and turn down to final size.
This will give you more area of contact or overlap of rings in which to create your profile. Don't try to glue up without any room for adjustments, design changes or errors.
As I always say, Glue big, Cut small
I would say wider, thinking of your stock as flats being stacked. Same thickness to get to the same bowl height using the same number of layers.
More segments makes each shorter and would require less width to get to the same place because less of an arc needs to be covered with each segment.
Both strategies would work.

That is a shame.
Wider pieces indeed required.
Keep an eye on the thickness of the bowl with fingers or calipers. If you are intending to cut so thin it is also wise to leave as much material as possible in supporting the lower parts of the turning
Yeah it is a shame but it’s how I learn. This is only my 3rd bowl turned so I’m ok with it 👌
