Will I wear out the roller of my sharpening/honing jig if I roll it (and the chisel) over the sheet of sandpaper while sharpening? I’ve seen one method in FWW recently where the roller stops short of the paper and another one online where it is rolled over. I don’t want the grit of the sandpaper to wear the roller of the honing jig (Veritas model).

As long as the roller, well, rolls, it will be fine on the paper or stone itself. Rinse it between grits to avoid grit contamination [a sharpening issue for than the jig per se]. Rinse when done and lube the shaft/bushing with a fine oil. I lube mine probably every few times I use it or if I know I will be storing it for a while.
