Can't tell you about the MDF, but when I get a delivery of pre-fin plywood, it's all consecutive sheets clean off the pile and cared for(mostly). Once it's in the shop, it's up to you. I store plywood vertically, and can leaf through the load, so I'm not dragging across the face of a sheet. Sharp corners are tough on it, but all in all, it's not that difficult to keep it undamaged.
I use it for cabinet interiors, so a small dent is usually not noticeable.
