Would shellac be ok as the final finish for a desk. It will be used in a home office. light duty. I could forsee an occasional coffee spill. Alcohol spills won’t be a problem.

If you wipe up the ocasional coffee spill in a reasonable time--you can finish your phone call, but not wait overnight--it won't be a problem. I'd use a coaster if you have really really hot coffee mugs.
