I’ve built a real nice table. Used high build minwax poly to finish. Looks great but the finish is shiny compared to the chairs that just arrived. Color is good but how do I “kill” the shine and have a “flat” finish?

The finish needs to be at least a month old for hardness.
Practice on a "hidden" part of a chair. Use 4-0 steel wool both with and without mineral spirits as a lubricant. Both will result in a soft matte finish. Without lubricant should be a little glossier. If it's too soft, you can bring it back toward semi gloss or gloss with automotive rubbing compound (red) and polishing compound (white).
