If I put a wood floor in my shop, should I finish it? I’m concerned the finished floor would be slippery with sawdust on it.

It will finish itself. spilt paint, coffee, pop, glue, stain, sweat, etc.. will cause it to develop a lovely patina.
If you shellac it it's not very slippery especially if the floor isn't sanded with anything other than coarse sand paper.. It won't be dance floor glossy but the dance you do while you work isn't really ball room worthy either ;-)
The only advantage of shellac over a bare floor is that it will make sweeping a little easier..
