Any body out there have a detached shop, with a working sink and some kind of collection system for the waste water other that piping it back to the house drain system ? How did you set yours up ?

That is going to be a question for your Local or County Health/Sanitation Dept. Those gray water codes vary greatly.
If you don't produce a lot of waste water then perhaps simply draining into a bucket or barrel will do. Take the container by hand truck to dump it.
considerations
A lot depends on what you are actually using the sink for. If just for occasional hand washing, the practical aspect will be different than if you are cleaning brushes or disposing of solvents. But, Bruce hit on the first step - checking with your local authorities - building-code enforcement, or water authority regarding what is legal in your area. Then, you can decide on how you want to proceed.
