You guys always bail me out on this topic. Okay, so this old jointer had a 3 phase motor that I’m replacing. I’ve acquired an appropriate single phase motor and an appropriate switch to accompany it. Must I figure out how to wire through this electrical panel on the side of the jointer’s cabinet, or was that only needed for running 3-phase? I mean, if possible, it seems like having the electrical cable running to the wall socket from the on/off switch, which is then wired to the motor would be the simple way to go. Why is that the wrong idea? Thanks in advance! (See photos)

Nope, that is the 3 phase motor starter. You probably could start the new motor by using one of the 3 circuits but your far better off with a new single phase magnetic switch.
