Hello, I just applied about 5 coats of waterlox original sealer/finish on a coffee table top, I sanded between coats with 320 grit, after final coat I rubbed with 0000 steel wool to get out dust nibs. I then rubbed down with a clean cotten cloth and believe it or not it looks pretty good as is. My question is can I skip the pumice step and go straight to rottenstone with soapy water to bring up the sheen? Thanks

Yes, you probably will have no problem doing that. At worst it might take a little longer to get the sheen as even as you want but it would cause no problems. For best results give it a few weeks to finish curing before this final rub out step.
