It will slow it but never stop it altogether assuming your spar has UV inhibitors. UV inhibitors are sacrificial so at some point they will all be spent and the cherry will darken. Spar will help and the length of time it lasts depends entirely on how much you put on, how often you recoat and how much UV the door is exposed to.

My question would be why stop it? The patina that cherry develops with time is one of it's greatest attributes. To each his own I guess.

Although I agree that aged cherry is beautiful, so is freshly planed cherry. That was why I was asking. It would also open other design possibilities.
