I’m making shaker style cabinet doors and would like to use figured cherry for the panels. The finished panels will be 12″ x 30″. I have some 12″ wide boards which have pretty wild grain. I’m planning to resaw to 1/4 or 5/16″ thick. Another option is use 2 bookmatched pieces resawn from 6″ boards and glued on edge. In either case what’s a safe minimum thickness?

It's my opinion that the panels should be a minimum of 1/2" thick, 3/4" would be better. If it's the flat panel look you want, just hold the raised side of the panel to the inside. It's my observation that large thin panels just do not stand up to the test of time. I have a couple of antiques with thin panels which have split which is testimony enough for me. Of course there are exceptions such as verticle grain spruce like the back of a guitar. They seem to hold up well and are quite thin. So ultimately it's your call taking all things under consideration. Good luck!

That's pretty thin, especially for a panel that large. I'd not worry so much about splitting, if you build the door correctly allowing for movement. But cupping and bowing in the center of such a large, thin panel, especially if it is highly figured, is a possibility.
I believe if you are intent on using this stock, you'd be safer to thickness them to a minimum of 1/2" or so, or else to resaw and take down to veneer thickness, then glue to a thicker panel (of the same species if you like) for your doors.

that is a rather wide panel and, as ray said, it will likely cup. perhaps the shaker style would not be compromised if you were to include a center divider stile and have two panels instead of one.
