I recently got 4 chairs from a friend who rescued them from the trash. I don’t know the wood but beleive it is cherry and most certainly a hardwood. I’m in the process of sanding off the varnish and the majority of the stain. However, it is going to take MANY MANY hours of power and hand sanding to get to completely clean, bare, white wood. I plan on restaining the chairs after the varnish is off. My question is how much stained can I leave on and how much do I have to take off. I am planning on staining the chair a dark cherry. I don’t want a blotchy, two tone look. However, these chairs are certainly not worth putting in 10 hours of hand sanding for each one. Thanks for the help.

Why not use a chemical stripper,this will remove the varnish and maybe some of the coloring.At that time you can decide if you want to do any sanding. Depending on what you are after you don't have to(and probably can't without bleaching)remove all of the stain.
I agree with the previous post - use a chemical stripper. This is exactly what they were meant for.
