I think I read an awi update on recomende substrates for plastic laminate countertop fabrication in either fw or fh. Veneer plywood was removed from the list.
This is an update to awi 7th edition. If anyone can forward this it would be greatly appreciated. We have an order for 75 counters and can get 5 decks out of 5×10 pb but only 2 decks from 4×8 plywood.These are nonsink counters .

I always used particle board and a good petroleum based contact cement (Weldwood?). I rolled it on both surfaces, let it dry, then used separator sticks about every 12" and worked from one end to the other, pulling out sticks as I went. I put the edges on first and used a straight bit (with bearing) to clean them up Before applying the top surface.
No experience using MDF for this.
