That's a loaded question. For a professional it would be a sprayed finish like a catalyzed lacquer or conversion varnish.
For someone without spray equipment I would suggest a varnish such as Behlens Rockhard or McCloskeys Gym Seal. The Gym Seal has a strong yellowish cast to it so you would need to take that into color consideration. Both varnishes are tough.
You could also use poly if you are so inclined.
What type of wood is the table made out of and what type of finishing experience do you have?
There is not a "best" finish. Just good choices.

Thank you for responding. I don't own any spray equipment. The table this time will be made out of red oak. I have been doing woodworking for the past two years. Most of my finishes have been poly. But now that I'm getting more clients I want to make sure they are getting the best top coat that I can provide.
