We re-finished an end table few years ago and used linseed oil on the top. When it started drying out a while back, my wife started using a furniture oil (Old English?) on it. Looks good for a while but dries out. Not sure what kind of finish I can now put on the top because of all the oil it has had on it.

Polishes like Olde English are mixtures of mineral spirits, mineral oil (sometimes,) fragrance and maybe color (like the Scratch off). The only non-volatile portion of all this junk is the mineral oil and colorant (asphaltum)
You could simply apply more linseed oil over what remains of the polish on the wood, but to be safe -- wipe it down first with a cloth and mineral spirits to remove dirt and grime. Then switch to a clean cloth and wipe the surface, turning the rag frequently. When the cloth wipes clean, you're done.
Then apply more linseed oil, but in thin coats. Thin coats dry faster than thick ones. Also, linseed oil is a penetrating finish so its not built up on the surface. Its also a maintenence finish, meaning you should apply more oil every year or so.
In the future, I think a coat of paste wax would look better on your table and make it feel better to boot.

*Yes, do yourself a favor and brush or wipe on a coat or two of varnish or "Danish Oil" -type finish (which is mostly thinned down varnish) after cleaning it. It will offer a lot more protection and needs only an occasional paste waxing forever more.
