the jatoba i am using isrift and 1/4 sawn there are 23 boards 2-3/4″ wide plus 2 breadboard sides running the length of the table. I am using polyurethane glue.

Sounds like wuite the glue-up. Was there a question in there? Polyurethane would not be my first choice.
I use Jatoba all the time. I love that wood. I wipe the wood with Acetone untill a rag shows no color/colour?... I then it dry off and then glue (both sides). Never had a part that came un-glued... I admit that I use a spline at erach of the corners...

that is a very wide glue up. i might want to run clamped cauls perpendicular to the grain of the table top to ensure flatness. how did you plan to flatten it when the glue dries?
