I'm not sure there is one simple answer to that. It will depend on how it's being used and what type of bit you are using. If you are using a bearing bit I would say 1/4 would be the minimum, but I prefer a bit more for a margin of safety. On the other hand if you are using a guide bushing an 1/8" would be fine if the material is strong enough.
I usually try for 1/2” MDF but I don’t go nuts over it if I do not have any handy. 1/2” is enough to have a decent bearing surface while not being onerous to shape.
But I’ve used 1/4” and 3/4” in the past and probably will in future.
If it will be a template to which other parts will be screwed or attached, like De Staco clamps, then 3/4” is probably better so there is enough meat for screws to sink into.

Might use 1/8” solid plastic. You’re probably right, 1/4” would be safer. Thanks for your response.
i'm a fan of 3/8" baltic birch for my templates.
