I notice you haven't entered your location in your profile, but the answer relates to where the cypress will be used and whether it's outside touching the ground or indoors.
Built a WineTasting table for back patio out of cypress last summer. Several points to be aware of: 1. The wood I had seemed to splinter very easily. Go slowly when cutting or working the wood. 2. I have noticed a crack in the middle of the top today as it finally dried out from a week of rain. Not serious but may represent significant wood movement with moisture. The wood seems to be holding up well otherwise.
Not sure you intended your post for me, but I have used a good deal of cypress for a variety of indoor and outdoor projects. There are a lot of variables involved in where the timber came from, what kind of cypress it is, its age, how it was dried and sawn, how it has been stored, and so on. If you use it outdoors in the northern parts of the US, it will weather differently than in the South. If it's used indoors, it will have characteristics similar to hardwood. For example:
