I am planning to build a Office Desk from solid Jatoba Lumber. I have never used this wood before and was looking for some advice on a suitable finish.

I have never finished Jatoba before. For a desk, I would consider a catalyzed lacquer or conversion varnish which are both sprayed. If you are doing it yourself, a hard varnish such as Behlens Rock Hard would be a good choice.
If the wood is oily, a thin coat of blonde shellac will help lock it in prior to finishing
Be sure and let the finish cure well before you start using it. You'll be glad you did. The old adage is 30 days before use and abuse.
