I have a gallon bottle of Titebond thats been on my shelf for the better part of 2 years. Is there any reason not to go ahead and use this glue, and is there a shelf life expiration date that I don’t see?

I've been using mine for that long(two years) and I can tell you the drops are still a pain to remove...so I'd say it's still working.
Go to the Titebond website. There is some info on shelf life there.
Personally, I would just get new. Adhesive is too important and the least cost to a project. It's not a place to be foolishly frugal.
Titebond claims one year, but provided the appearance does not change, it should still be functional.
Me, I would not take the risk, it's not worth the potential problems ahead.
One year, unless it gets really hot, then much less. I buy it by the pint.
