I will be installing a set of matching bookcases on either side of a brick fireplace. I have never had to do an installation like this before. Do I attempt to scribe around every brick or is there a better way? I figured I would post on the FHB site also.

I would not.
When fitting pieces to brick or stone walls, I've done it the other way around with great success -
Put a thin (3/8" or less) trim piece on the outside of the cabinet extending to the brick wall. Mark the wall and use an angle grinder with a stone-cutting disc to cut a shallow channel in the brick or stone, until the trim piece will neatly fit into the whole length of wall. A little bit of colored RTV or builders adhesive will make it look perfect.

One caution about tackling indoor brick with a grinding wheel. You generate nasty dust. It is very fine, very abrasive, and goes everywhere. Do a very good job sealing your mess away from the rest of the home, or you'll really irritate the homeowner. DAMHIKT.
