I intend to make a dining room table top of American oak boards glued together length wise.
The table will have a centre part and 2 extensions which slide under the top.
The main part and extensions will be of the same boards, keeping the grain pattern uniform in all the top.
The board will be 1 inch thick.
Will the boards withstand the pass of time and will not open?
The American oak is kiln dried and today has 6% humidity.
What are your comments or recommendations.

It will depend on the overall table design, a plan would be needed to answer you correctly.
Many questions...what kind of oak & how is it sawn are the first two. A design drawing would help a ton.
The wood is dry,we'll assume flat, properly joined and glued why wouldn't it hold up? You'll need to account for expansion fastened to the table frame but you probably already know that.
