Peter,
I like to use Bartley’s Gel Varnish for my furniture but I am wondering if you think it makes sense to add a topcoat on top of the varnish for the final step? If so, what do you suggest for a topcoat?

If you like the results you're getting, why would you? If you're looking for a little more protection and surface build you could try one of the many varnishes or urethanes
I know there are endless choices out there. Waterlox is a nice finish that is easy to use. Behlens bar top varnish ( a short oil varnish) is another that comes to mind. While I don't use urethanes they are also an option.
I also would use one type or the other as opposed to mixing the types. Why create a possible problem for yourself?
