I really like to use these bits to relieve background for carving. They are much superior to straight bits because the cutter is also under the bit as well as on the sides. This eliminates the shallow “steps” you get with a straight bit when relieving background for carvings. Several mfg’s offer these bits.

There's a cousin of that bit that helped me big-time when making some stands to dress up the display of plexiglass "ball cubes" for autographed baseballs. It was hard to find, but a planing bit, not the curved sides like your tray bits, and a smaller cutting radius. Made a really nice surface in a ~3" square, 1/8" deep, in walnut and alder. Just went around the edge with a 1/8" straight bit to get the corners.
