Does anyone know what issue had plans to build a trebuchet / catapult. I did a site search and came up with nothing here. But I was sure I had seen this in FW.

I have been reading it religously for 4 years and I never noticed one. I think you have the wrong magazine.
Have you checked at Fine Homebuilding? I think that's where I saw a back cover about a trebuchet done by a group of timber framers. IIRC, it was exhibited and demonstrated at VMI. Don't remember seeing any plans.
I don't know about any plans in FWW, but there are plans for a model trebuchet in American Woodworker #63(Dec. 1997). Plans for a full-size one are another story....

I'm pretty sure FW has never published plans for a trebuchet.
Google with "trebuchet plans", and you'll get lots of hits.

Scientific American had a big article on them a couple of years ago. Art
The Timber Framers Guild built one a while back, there was even a Nova special on it. Try the TF Guild website, or here's a direct link http://www.tfguild.org/projects/fling0.html
I actually saw their trebuchet when I visited scotland. Have fun
