I had an idea of replacing a tub/bath wraparound with wood? Does anyone have suggestions/ideas/cautions about doing this or about best wood(s) and finishes to use? Any feedback at all would be appreciated. Thanks in advance.

Personally this is more trouble than it is worth, I'd save the woodworking for areas where it is less stressed and more visible.
That said, if I were doing it I'd look into using a two part epoxy finish meant for building boats, something along the lines of what they use for building strip canoes. Both the back and the visible face of the panels would have to be sealed with the same finish so you would have to build the panels and finish them before they were installed. It would be a challenging job.
