I am building a large solid walnut wall unit. I had planned to use 1/4″ walnut ply for the backs of the cases but I find that for $90+ I will get a 4×8 sheet with splotches of white sapwood evenly spaced across the width. Now I am not a good furniture designer, (I would have trouble designing a square box) but in the spirit of using contrasting woods I was wondering if I might use birch ply instead of walnut ply for the backs. Maybe case backing is not the proper place for contrast ing wood color. Any suggestions (some reply other than “Ha Ha Ha)?

Birch would go very well with walnut, And would brighten up the interior very nicely. IMO.

The case back is often a very good place to use a contrasting material. I don't know what style your unit is. Some possibilities:
You might consider using the walnut veneer and bleaching it. That way it retains the overall grain patterns but contrasts the dark color.
Birch or maple ply will contrast well.
You can even consider using a painted back, in a solid color.
