I’ve enjoyed reading the various approaches to sharpening planes and chisels, but no-one has mentioned listening to the sound of the blade moving over the abrasive. I am mainly a free-hand person, and as I raise the heel of the blade to put the final touch on the bevel I pay attention to the change of sound. It’s easy to tell when the very edge is being abraded by the sound it makes.

I go by sight, feel and color, those are my "ears". I would just do it with a stone on the bench and do the figure 8. I haven't done those planer's knife in a long while...
