I consider myself a beginner on the fast track to learning. I recently purchased a cabinet from IKEA, made from MDF and covered with veneer. I would like to recover it to change the color. Can I do this by gluing veneer on top?

You won't have to remove the existing veneer but you may have trouble with the old finish interfering with the glue. I'd use a cabinet scraper and a light sanding to remove the existing finish before attaching the new veneer.

Light scraping and sanding should be able to remove any finish you might find on an IKEA piece. Choice of glue is very dependent on the size of the veneer job and what tools you have available to apply pressure while the glue sets, although some glues and techniques don't require traditional clamping.
If you include some details about the size and type of veneer and what it is being applied to, I'm sure you'll get a few suggestions on how to proceed. If you've never done veneer work, it might pay to get a book on the subject, there is a lot to know and many ways to approach the work.

What kind of glue are you planning to use? This will effect clamping approach...
Regular yellow wood glue.
Firstly, not to insult yo or anything are you sure it's real wood veneer? Because a lot of Ikea stuff is actually a picture of wood. If it is real wood the dogma on veneer saids what you do unto one side you must do unto the other. That is if you put veneer over the top of veneer you must do so on the other side. The implication being you'll create unequal stresses if you create an unequilibrium.
