What is the best adhesive you would recommend to glue maple veneer to MDF or pine. Is PSA backed veneer OK? Can I use a water based stain to color the veneer?

Good choices are hide glue, PVA, and urea formaldehyde(sp?) types, plus one or two others. Contact cement, of which PSA is a type, is generally a poor choice being too soft, thick and liable to lifting in use.
Water based dyes and stains are well suited to colouring almost any timber (or veneer) including maple. Slainte.

Shatzo: Never too old to begin anything - it is just a mind set. I think the most important thing to do is to keep being productive and to challenge yourself in any way. The best adhesive would be Urea resin. Why? Reduced springback, the natural characteristics of Maple (tight grain and tension). I do not recommend PSA. I have a nice adhesive seleection guide of my web site.

Hide glue tops my list. Any bleed through will not affect staining whereas PVA and most of the rest will.
My list in decending order,
1.) Hide glue, either hot or liquid, it depends on the need for open time. In a press I use liquid, for hammer veneering i use hot hide glue.
2.) PVA (Yellow or white glue), because it's fast, I use a press and sometimes like the quick turn around time of PVA. The downside is that bleed through is a serious problem and creep can be a problem as well, PVA is not very good for bent laminations because of the creep.
3.) Plastic Resin, it comes in a powder and is cheap and rigid.
4.)Epoxy, great stuff if you don't get bleed through but it is pricey.

7,468.) Contact cement, Wow, I'm surprised it made my list at all! Well, 7,469 is roofing tar.
