I recently saw a video by Frank Pollaro of Flamingo Specialty veneers. In the show he used a kind of knife that was about the size of a flattened block plane and it seemed to fit the palm of his hand. I can only find reference to exacto knives or traditional veneer saws and wondered if his knife was no longer available or if anyone had experience using one?

The old timers used to use a chisel or plane blade that they shaped to their liking. Generally in a rounded shape. I've seen some japanese marking knives that might work also.

Beat it to fit / Paint it to match
Try the web sites http://www.vacupress.com and http://www.veneeersystems.com
On at least one of them I remember a trimming tool to make thin strips of veneer. Not sure if this is the intended use for your knife.
That is a French veneer saw. Search under French.
