Where do you get this wide veneer and what is it’s thickness?

I would go check out veneersupplies.com and joewoodworker.com. They have a lot of great information about presses, veneer, and adhesive options. Typical veneer is 1/42" thick, but is available in a variety of thicknesses. And yes glue can bleed through. Start with this page: https://www.joewoodworker.com/veneering/veneering-myths.htm

Yes, veneer glue can bleed through, particularly with figured veneer, burl, etc. where you're often basically dealing with endgrain.
Paper backed veneer is one way to go with these. You can also put a coat of shellac on the glue side.
Using hide glue is a good way to go if you expect bleed through, as it cleans off easily and doesn't stain.
