I thought I would get back to trying a little veneering – absolutely non-serious, just want to try it with some of the veneer from Lee Valley’s pizza box full of veneer. I did some about 5 years ago using a vacuum press which worked out reasonable well, considering my lack of skill.
My liquid hide glue from Lee Valley is now perhaps 6 years old, though. They talk about a shelf life around one year… I’ve had it in the refrigerator for the entire time save when I was using it.
Is it toast? Or is it possible that it is OK having been stored cold… (bit expensive for such a casual veneer person such as myself, to buy a new bottle per sheet of veneer).

If the piece is important and needs to last a long time, I'd say buy some new. Why risk it? If not, try the old. If it has a workable consistency, doesn't feel glutinous or "snotty" and smells OK, then see how it works on a test panel.
Since hide glue is a protein, it is of course subject to degradation over time. If its stored in the fridge its very likely to be ok.
Before you buy more, warm it up well and a finger stringing test will indicate protein integrity (think gluten in bread dough).
