More a Breaktime question than a furniture building question. Probably even more suited for a search in http://www.traditional-building.com or Period Homes or Old House Journal. There's a few other old house mags on the stands if you go to the big box bookstores.
A better description would help. Victorian is one thing. Carved gouges sounds like an adzed finish which is a different period altogether.
