Have almost finished planing and scraping an approximately two square feet piece of walnut burl which I plan to use as the base for a bronze statue of a horse. There are some voids in the surface with the largest being about 1 square inch. Any ideas on filling these voids – prehaps with crushed stone and epoxy? Also does anyone have any ideas on a type of finish good for this application?

Not sure I understand "voids". Are they just "imperfections" in the burl wood? We have a 7 foot crotch of walnut burl we have used for many years as a table. Just wipe on satin varnish for a finish. If the voids are a part of the character of the wood, I would do nothing.
