I am in the process of building a garden style bench out of walnut. The bench will be an indoor piece. I would like some advise on getting an outstanding finish.

Check out WaterLox Original . It is easy to use and will give you a finish that looks like a rubbed oil yet offers more protection. Be sure and read the directions.
You should also consider prefinishing some of your components prior to assembly. If you do so, be very vigilant on keeping any joints that will receive glue free from contamination with the finish.
