I am designing and laying a walnut parquet floor for a foyer. Given the heavy traffic and fact that at times it could get a little wet, I was thinking of using marine grade finishes (sorry to be vague here but have not decided on anything specific yet).
Can anyone recommend a durable finish for walnut without impacting the natural color of the wood?

There is no specific finish for walnut floor compared to, say, oak. But finishes meant for flooring are still your best bet.
Look at Bona finishes. A couple of those are the most durable anywhere. Their top of the line, Bona Traffic, is a two part mix, and is incredibly durable. It is water based, and non yellowing. I put in about 900 square feet of birdseye maple floor in last year, and that's what I used.
Be aware, though, that over time, walnut will get lighter with exposure.
Most Single component marine grade finishes are Impervious to water and sunlight at the expense of wear/impact resistance. They also add lots of Amber due to their UV blockers. General finishes has a good selection of pre catalysed floor finishes that might fit the bill.
