Made some small wooden vases(6″) out of walnut and use a test tube in them to hold water and a rose or two. I finished the vases with danish oil and love the natural look, but when I fill the test tube with water some gets on the wood and gives white spots..How can I get the same natural type look but protect against water spotting??

After the oil dries completely (no odor), you can apply a coat of varnish or poly over it for added protection. A wiping varnish/poly in a satin sheen will retain the natural look.
You can make your own wiping varnish/poly by mixing oil base varnish/poly 50/50 with mineral spirits. Wipe on a thin, even coat and let it dry overnight. If needed, you can use steel wool to dull the coat of varnish and apply a second (or third) coat.
