I just stained some cherry with an oil base stain and I am getting ready to apply a water based poly over it. There is some residue left over (very minor) in the nooks and crannies and I was thinking of using mineral spirits to remove it. Would it dry relatively quickly to apply the poly, should I not worry, I’m concerned about the finnish adhereing to the oil? thanks

To be on the safe side, I'd try the process on a leftover scrap. I have applied Fuhr finishes from Homestead Finishing an hour after wiping on a very light coat of boiled linseed (and scrubbing off any excess oil with dry rags) but in your case I'd probably wait about 3 days, or at least until no residue comes off a clean dry rag. I've had finish adhesion failure before and it was NO fun. Don
try going over it with some de waxed shellac then spray the w/b

In addition to what Don and Ron said, if you have any suspicion that the poly will not get a good grip on any surface because of oiliness and other contaminants, consider the purpose made sealer Zinnser SealCoat. It's a dewaxed shellac formulation all ready to go in a can. As I understand it, it's formulated specifically for such barrier coat purposes, yet it can be used as a finish in its own right.
I've used it a few times since it came on the market with success, and if you want to experiment with it you should be able to buy it for less than $10 a quart. I was quoted $6-50 yesterday by my regular polish supply house. Slainte.
