I have a cherry and maple table top that I with to warm up with some ruby shellac, but I can only get the waxed version locally. As the piece will be used… I am planning on finishing it off with some wipe-on-poly. I know that the poly can only be used on dewaxed shellac, so can I first apply the ruby shellac then apply some dewaxed super blond shellac? Will the wipe on poly adhere?

I am not sure about laying Dewaxed over Waxed shellac. Why don't you just tint some dewaxed shellac with TransTint's to get the color you want? It will save you the headache.
I would recommend to head over the Jeff Jewitt's forum at Homestead Finishing and ask him. He is THE MAN when it comes to finishing. He can probably tell you how many drops of TransTint and of what color to achieve your Ruby Shellac.

Why not use a standard (non-poly) varnish? It will adhere just fine to to non-dawaxed shellac. Standard interior varnish is just as good as poly varnish for almost all applications. It fact, it is clearer and generally provides a nicer appearence. Go to a Sherwin Williams store. They generally carry standard varnishes. McCloskey Heirloom is an excellent choice as is Waterlox Original Gloss or Satin.
You can de-wax the shellac yourself. Put it in a glass jar and let the wax settle to the bottom over time. Then carefully pour off the clear de-waxed portion from the top. I use this technique all the time. I recommend that you have this book in your shop:

While this will work with some shellacs you make from flakes, it does not work well with the Zinsser products. Zinsser has a process they put their product through to increase the shelf life. One of the byproducts is that it sort of homogenizes the shellac and the wax only very, very slowly falls out of suspension.Howie.........

See if you can find shellac in spray cans, All shellac in spray cans is dewaxed. I know zinsser makes it in spray cans.
