I am building 2 drawers and wanted to use solid Wenge for the fronts. I intend to hand cut half blind dovetails and use a lighter colored wood as the sides for contrast. I know that Wenge is a very coarse wood and wonder if this is a wise choice. I have a vacuum press so veneering is an option. Also, I intended to use quartered sycamore for the sides.

not a whole lot of xperience with wenge, but i think dove tails would be a real challenge - as you said it's pretty coarse stuff, and i find it very brittle - shattering more than cutting.
