drywall, spackle, and paint maybe?
If the room is drywalled I would put corner beading on it, mud it, sand it and paint it.
I had a friend who tore down a wall to make a larger room from two smaller ones. He put up a distressed beam that he made out of a 6x8 timber. This hid the sill plate he had exposed. He nicked it up with a hammer and hatchet, sanded it, stained it and it looked great. He made mortises in the studs and tenons on the end of the beam. it was a bit of tight squeeze so he had some patching to do on the wall.
You could do a faux or fake beam by wrapping it with three boards. Not sure what the layout is, so I can't target my comment.

Ken

They make hollow foam 'beams' for just just that purpose, They are light weight and finished to look like barn beam It is extruded in a U channel shape that will 'cap' the existing studding Easy to saw and to cut with a knife. I wouldn't use my email address as you've done. Instead use a simple pskyeash
