I got a $200 gift card from Woodcraft for Christmas. I’d like to get gouges as I currently have none. I was thinking about getting full size Pfeil gouges since there is currently a 15% off deal going on. Any input on these? What would be good starter set (sweep and size)? What am I going to carve, you ask? I’d like to try ball and claw feet at some point, maybe something like the pie crust serving tray shown on Rough Cut. Looks like I could get 6 or 7 gouges with the gift card, so any input would be appreciated.

I'm not a "real" carver, but I sometimes play one in my shop, where there are no TV cameras. ;-)
Most of my carving tools are Pfeil, and I've had good luck with them. You might be well served by getting a book or two first, to get a better handle on types and sizes recommended for the style of work you want to do.
Gouges
The swiss made gouges are the best quality I could find today as new product. I had luck on the internet buying antique english tools - great quality for reasonable costs. Usually found in poor condition but after cleaning and sharping - great tools.
