New to woodworking here…Can anybody tell me if there is a standard width for rails and stiles? I’m guessing it depends on the size of the workpiece?

If you're trying to match an existing piece you can use those widths, My guess is that the minimum for kitchen cabinets is about 1 3/4", which looks very skinny on larger doors. Recently I looked through some books on Shaker furniture, and found I liked much better a slightly wider face frame stile and rail (perhaps 2"), and more pronounced door frame members. The door stiles and top rail were perhaps 2 1/4" and the bottom door rail 150% wider still. I'd suggest if you have the patience to make some scale drawings. I wouldn't suggest a "standard" other than a minimum if trying to use as little stock as possible; in that case, copy the mass produced kitchen cabinets.
Standard for R&S
I usually make mine 2 " wide, however , I have made them 3" in order to match a client's existing cabinets. If you decide to use concealed hinges as so many do, I would not reccomend less than 2" . You will need to drill a 1 3/8" hole 1/2" deep. A 2" stile and rail is comfortable to work with when you are routing an edge whether using a router table or freehand. you will still need to be careful not to get your fingers too close to the router bit. Be sure to use hold downs whenever possible. These dimensions are for cabinet doors. If you are making a full size entry door or something, obviously, these dimesions are useless.
