Where can I find plans for a convertible baby bed???

I don't understand what you mean by convertible. Do you want to convert it into a larger child's bed later? Did you want a baby bed that could collapse? Maybe refining your search to include key words like "crib", etc. would help.
"convertible" is a standard term describing a baby bed which changes mattress position heights
Actually in today's nursery furniture convertible means it can be a crib, a toddler bed and even sometimes a full size bed frame.

I'm assuming you are talking about a crib that can convert into a toddler bed and eventually even into a full sized bed, or do you have something else in mind?
Having built several cribs/beds for both my children and now my granddaughter I will caution you that regulations and safety guidelines are constantly changing. Plans that are 5 years old probably what be acceptable today. I personally prefer to design my own it's not terribly difficult.
