Its been a few months since I’ve posted anything. I have a project that I’m going to do for our culinary arts teacher (class is next door to mine). I’m going to cover a 30″ x 72″ stainless table with a wooden top for the students to to knead bread. I want to make the table similar to a large cutting board just in case the kids decide to take a knife after it…
The two questions are:
Is there any specs concerning wood tables for commercial kitchen…
What is the appropriate finish? I plan on using veg oil but am looking for alternatives, sealers etc…

PS.. my payment is getting to eat free the rest of the year.. They make phenomenal meals… our culinary arts teacher used to cook at the four seasons in Las Vegas..

You should stay away from the veg oil , it can turn rancid .
Instead a safer option is Mineral oil . I melt a bit of parrafin wax into the mineral oil and apply .

i use heat treated walnut oil on my cutting boards. totally non toxic. available from most turners catalogs. brand name is mahoney's. good luck
I used to build work tables for commercial bakers. Coincidentally, I was once a woodworking instructor with the culinary arts department across the hall. In our school, they ran a restaurant three days a week. Great place for an outstanding meal at dirt cheap prices, not many folks know about the opportunities in vo-tech schools.
Bakers don't want any finish on their maple tops. They spread flour all over them and work the dough vigorously on the top. Kitchens that follow safety rules wash down their tops with bleach water, regularly. This would destroy any finish. In addition, any finish has the potential for becoming part of the bread. A very light coat of mineral oil would be OK since it won't last long and will bring out the natural color of the wood. Wipe it off thoroughly. I'd stay away from anything else
Don't be surprised if they ask if you can sharpen knives, too. You will enjoy some benefits if cooks like you. Have your students do all the work and you take all the credit.

Thank you for your info.. you just saved me some time and steps... They do the whole dinning experience about everyother week. $8.50 for what would average about $30-$50 in finer establishments.
